Baked Salmon Packets
If you’re new here then you should know that I love to make everything easy in the kitchen, which is why I adore Trader Joe’s so much! My aunt showed me how to throw together these amazing salmon packets and now I am going to share it with you! It’s so easy that you could put it together the morning of and then just toss the packets in the oven when you’re ready! Thanks to Trader Joe’s, we are cooking with some BBQ cut fresh Atlantic salmon. What could possibly be better than a quick, mess-free, delicious meal?
Here’s what you’ll need:
Salmon cut of choice (I used a BBQ cut, boneless, skin on filet)
Veggies of choice (I used mushrooms, asparagus, zucchini and peppers)
Olive oil
Salt
Pepper
Everything but the Bagel seasoning
Chile Lime seasoning
1 lemon (half for the juice and half in slices)
Parchment paper - for the packets
Steps :
Preheat the oven to 400. First you’ll want to lay a piece of parchment paper down, big enough to be able to wrap the salmon. Drizzle a teaspoon of olive oil so that the salmon doesn’t stick. Place the salmon (skin down) in the middle of the parchment paper.
Drizzle another teaspoon of oil on top of the salmon. Place your chopped veggies on top of the salmon. Don’t worry if the veggies are falling to the side because it’ll all be contained in the packet.'
Time to season. All quantities are up to you but I did a little salt, pepper, EBTB and a lot of the chile lime seasoning. After, squeeze the juice of a lemon on top (about half the lemon). Cut the remainder of the lemon into little slices and place that on top of everything. (Optional - adding a little pat of butter to the top).
Let’s discuss how to seal the packet. You’ll want to hold up the two long sides of the parchment and line them up together. Then roll the sides of parchment paper together (as if you’re rolling down a brown paper bag for a school lunch, etc.). After the top is secure, twist the ends of the parchment. Once the ends are tightly twisted, place them under the packet. The finished packet is pictured to the right.
Place the packets in an oven safe dish and bake for around 23-27 minutes. This all depends on your preference and how well done you like your salmon.
Once it’s cooked to your desired likeness, pull the dish out of the oven and carefully transfer the packets to plates. You’ll easily be able to slide the contents of the packet off the parchment! Enjoy!
